MADFISH MULLED WINE RECIPE
A super easy recipe to enjoy your favourite MadFish wine over winter. Perfect for a Christmas in July celebration or curling up on the couch in front of the fire. Makes 1.5 litres.
Ingredients:
- 2 bottles of MadFish Cabernet Sauvignon Merlot (see below tasting note)
- 120g Caster sugar
- 80g Rapidura sugar (or brown sugar for colour)
- 1 orange peel and juice
- 1 lemon peel
- 1 shot of Brandy
- 1 quill of cinnamon
- 3 bay leaves
- 6 whole cloves
- 4 star anise
- A pinch of ground nutmeg
Instructions:
Place the sugar, cinnamon, cloves and star anise into a large, heavy-bottomed pan.
Add the bay leaves and the peel of the lemon and orange. Slice the orange in half and squeeze in the juice.
Pour in just enough of the wine to cover all the ingredients. Place the pan over a medium heat and bring to the boil. Once boiling lower the heat and simmer for approximately 5 minutes, or until all of the sugar is dissolved and you have a fragrant syrup.
Add the remainder of the wine and the brandy, then gently heat for 10 minutes, until warm and fragrant. Be careful not to let the mixture boil.
Serve hot, with fresh nutmeg grated on top.

Tasting note: This deep inky wine bursts with aromas of blueberry and dark cherry fruits. This intense fruit punch, complimented by violet floral notes and a savoury earthiness make for an alluring nose. In the mouth are dark cherry, plum, berry compote and red liquorice flavours, while layers of dried herbs, mocha, clove and vanilla spice give enticing complexity. MADFISH PETIT VERDOT
Tasting note: This deep purple wine bursts with soft, floral aromas of violets & dark cherry & blackberry fruits. A full bodied wine with an earthy base, the palate is rich, generous, & lengthy with sensual waves of dark mulberry & blackberry & plum fruit flavour. A variety of contrasts – bold tannins that are ripe and inviting, an intensity of fruit, and yet a delicacy of flavours tingling on the palate.
