MADFISH MULLED WINE
A super easy recipe to enjoy your favourite MadFish wine over winter. Perfect for a Christmas in July celebration or curling up on the couch in front of the fire. Makes 1.5 litres.
- 2 bottles of MadFish Cabernet Sauvignon Merlot (see below tasting note)
- 120g Caster sugar
- 80g Rapidura sugar (or brown sugar for colour)
- 1 orange peel and juice
- 1 lemon peel
- 1 shot of Brandy
- 1 quill of cinnamon
- 3 bay leaves
- 6 whole cloves
- 4 star anise
- A pinch of ground nutmeg
Place the sugar, cinnamon, cloves and star anise into a large, heavy-bottomed pan
Add the bay leaves and the peel of the lemon and orange. Slice the orange in half and squeeze in the juice
Pour in just enough of the wine to cover all the ingredients. Place the pan over a medium heat and bring to the boil. Once boiling lower the heat and simmer for approximately 5 minutes, or until all of the sugar is dissolved and you have a fragrant syrup
Add the remainder of the wine and the brandy, then gently heat for 10 minutes, until warm and fragrant. Be careful not to let the mixture boil
Serve hot, with fresh nutmeg grated on top
