The best solution to cold weather…cosy nights in with friends or loved ones binge-watching Netflix or settling in for a movie marathon. (If you haven’t seen every Harry Potter film at least once – who even are you?!)
Here at MadFish wines we’ve been enjoying the nights in (perhaps a little too much!) and we’ve got a couple of yummy treats to sweeten up any cosy night on the couch. Pair then with your favourite MadFish red wine and you are good to go. Stretchy pyjama pants and Ugg boots are encouraged.
Sticky Chocolate Caramel Popcorn
What you’ll need:
- Popcorn
- 1 cup of Rapdura sugar (or Brown Sugar)
- 25g of butter
- ¼ cup of water
- 1-2tbsp of Cacao powder
- Handful of chopped almonds (optional)
- Baking Tray
- Greaseproof paper
- Rubber spatula or wooden spoon
- Large pot or microwaveable dish for popcorn
Method:
Prepare popcorn as per packet instructions (we did it in a large pot and used coconut oil for delicate flavouring)
For chocolate caramel, pour the water into a heavy-bottomed, non-stick saucepan. Add the sugar and heat over medium-high heat.
Stir to dissolve the sugar
As the water starts to boil off and the sugar colour starts to darken add the Cacao powder and butter
Stir in and remove from heat once butter melted and Cacao is mixed in well
Pour in the cooked popcorn and coat to taste.
If adding nuts do that here!
Leave to cool and eat straight away or place on a greaseproof paper lined baking tray and place in oven for 3-5 mins to bake the sauce onto popcorn.

Freckly Pretzels
What you’ll need:
- Pretzels
- 200g Block of chocolate (Milk or Dark)
- Hundreds & Thousands
- Saucepan
- Heat-proof bowl (large enough to cradle top of saucepan)
- Rubber spatula
Method:
Line a tray with greaseproof paper
Lay out pretzels on tray
Break or chop the chocolate into smaller chunks
Place chocolate in heat-proof bowl
Bring about an inch of water to simmer in saucepan. Set the heatproof bowl on top of saucepan, making sure the water doesn’t touch the bottom of the bowl.
Stir chocolate as it softens
Remove from heat when you have just a few small unmelted chunks (residual heat with melt the rest)
Using a spoon pour melted chocolate over the pretzels
Sprinkle hundreds and thousands over pretzels
Put in fridge to cool and for chocolate to harden.
These are divine with a MadFish Cabernet Sauvignon Merlot
