MadFish Sauvignon Blanc Semillon is crafted from vineyards scattered across the Margaret River and Great Southern regions. The South West of Western Australia is especially suited to the production of this iconic white blend, so much so that over time this style has evolved into the region’s signature white wine – nobody does it better!

Margaret River has more of a moderate climate compared to the cooler Great Southern region. Therefore, the grapes from Margaret River will be slightly riper and exhibit more tropical fruit aromas, while the Great Southern fruit possesses higher acidity and floral notes – when mixed together it is the perfect balance between the two.

Origins

Sauvignon Blanc and Semillon are green-skinned grape varieties originating from the Bordeaux region of France. In their native home, as in Australia, these two varieties are often blended together drawing upon each other’s strengths to create a more complex whole. Sometimes, these blends are Sauvignon Blanc led, labelled SBS, while other times they are led by Semillon, labelled SSB. Whether you prefer an SBS wine or SSB wine, there is no denying that these two are a match made in heaven.

Planted in many of the world’s fine wine regions, Sauvignon Blanc and Semillon generally produce crisp, dry, and refreshing white wines. In cooler regions, Sauvignon Blanc is defined by its pungent, grassy, vegetal characteristics, while Semillon leans more towards citrus zest and floral aromas with pronounced acidity. In warmer regions, both varieties tend towards tropical flavour profiles ranging from papaya and guava to mango with less acidity and richer texture. Sometimes a little oak is used to add complexity.

About

In a Sauvignon Blanc Semillon (SBS), Sauvignon Blanc is the star of the show – upfront, fresh, lovely and highly aromatic. Semillon on the other hand, is all about weight and viscosity, length and structure, and the more reserved character that lingers behind the scenes and holds the show together. In a Semillon Sauvignon Blanc (SSB), Semillon takes centre stage while Sav Blanc’s plentiful fruit lies underneath. Like any great performance, you can’t have one without the other. This noble blend aptly reflects the past, present and future of fine winemaking in Western Australia.

In the cool, southern reaches of Western Australia, Sauvignon Blanc and Semillon have had the time to develop varietal purity, intense flavour and structural exactness. From this gift of nature, the winemaker can with confidence enhance, embellish, and even temper the powerful, exotic and sometimes challenging expression to create a wine that is textured, layered and enriched.
